Preheat oven to 350°.
Prepare 12-count muffin tin by spraying with non-stick spray.
In a medium mixing bowl, combine dry ingredients.
Add remaining ingredients, stirring to combine*.
Fill tins 3/4 full and bake for 20-22 minutes until inserted toothpick comes out clean. Cool for 5 minutes before serving. Bake additional muffins as directed above.
*Be careful not to over mix, leaving pea-sized bits throughout will ensure the muffin doesn't get too tough and dry during the baking process.
